Kumru Sandwich (Cold) Recipe

Kumru Sandwich (Cold)

The original İzmir Kumru is a special flavor for the Aegean region with a geographical indication registered, prepared by adding İzmir Tulum Cheese, tomato and pepper to the Kumru Bread and served cold. It takes its name from a special sandwich bread made with chickpea yeast, which is called "kumru bread" because it resembles the body of a dove bird with its wide middle part and tapering towards the ends. • Sandwich Bread: Sandwich bread is a practical carbohydrate source, typically thinly sliced and with a soft texture. It provides good energy and the fiber it contains can aid digestion. Whole wheat sandwich bread, in particular, offers more fiber and nutritional value. It pairs perfectly with protein sources (cheese, meat, legumes), vegetables, and healthy fats (avocado, olive oil). It offers creative options for different flavor combinations.
  • Tulum Cheese: Tulum Cheese, a traditional Turkish brined cheese, is rich in high-quality protein and highly bioavailable calcium, supporting bone health. Its B vitamins contribute to energy metabolism, while its mineral profile can bolster the immune system. It pairs excellently with breakfast spreads, salads, or fresh fruits like watermelon and melon.
  • Butter: Butter is a rich, flavorful fat derived from milk. It contains fat-soluble vitamins like A, D, E, and K2, along with healthy fatty acids, serving as an energy source. It's easily digestible. Butter enhances the taste of meals and rice dishes, is spread on bread, or used in sauces. It's indispensable for breakfast tables and various recipes.
  • Tomato: Tomato is a fruit rich in lycopene, a powerful antioxidant that supports heart health and helps protect skin cells against UV damage. With Vitamin C, it boosts immunity, while potassium contributes to blood pressure regulation. Lycopene absorption is enhanced, especially when consumed with olive oil. It is an indispensable ingredient for basil, garlic, mozzarella, and various salad and pasta dishes.

  • Green Pepper: Green bell pepper is a vitamin C powerhouse, boosting immunity and supporting collagen synthesis. Its antioxidant content, including flavonoids, protects cells, while high fiber aids digestion. Low in calories and rich in potassium, it positively impacts blood pressure. It pairs wonderfully with chicken, red meat, onion, tomato, garlic, and olive oil, making it ideal for soups, salads, main dishes, and omelets.
