Every brave person has a yoghurt dish, and every region of Türkiye has a different tirit recipe. This zero waste and recycling dish, which has many varieties, is basically made by drying stale bread, pita, phyllo dough, etc. in the oven and soaking it in meat or chicken broth. It is served with garlic yoghurt and pepper oil. Enjoy your meal!
Slice the stale bread first. Then chop it into cubes. The bread needs to be dried thoroughly so that it can absorb more of the delicious broth. Depending on the ambient temperature, you can do this by leaving the bread uncovered or baking it at low temperatures.
Chop the onion for the mortar. Heat the oil in a deep pot. Fry the onions until they become transparent and add the tomato paste. Add the minced meat and stir together for 3-4 minutes.
Add 4 to 6 glasses of broth, or drinking water, to the roasted minced meat mixture and boil over low heat for half an hour.
For the top sauce, peel and crush the garlic. Add whipped yoghurt and mix. Add 1 teaspoon of salt.
First, pour the juice of the mixture evenly onto the breads you placed on the serving tray.
When serving, pour garlic yoghurt over the tirit. Add the remaining minced meat mixture. Heat the butter without burning it and immediately add the red pepper flakes. You can add dried mint to this oil according to your taste. In Anatolia, oil with mint and chili peppers is generally preferred.
You can decorate your prepared tirit with finely chopped parsley leaves and serve it hot or warm by drizzling it with spicy oil. Enjoy your meal!
Note: Instead of baking stale bread, you can sauté it in a pan by seasoning it with a little butter.

Dry Onion:
