Practical Yogurt Soup

You don't have rice at home, you don't have much time, but if you have a spoonful of flour, you can have a delicious highland soup in minutes with this practical recipe. This soup, which can also be called flour soup with yogurt, is served with mint butter sauce. Bon Appetit !

Ingredients:

For 4 people
🕐 Preparation: 5 min.      🕐 Cooking: 25 min.
For the Soup:
Strained Yogurt 1 Qty
Flour 2 Tbsp
Water (Hot) 6 Cup
Salt 1/2 Tsp (large)
Egg Yolk 1 Qty
Olive Oil 1 Tbsp
Butter 1 Tbsp
For the Sauce:
Dried Mint 1 Tsp (large)
Butter 2 Tbsp

Instructions:

  1. Heat the olive oil and butter in a soup pot. Being careful not to burn the oil, add the flour and fry for 2-3 minutes until the oil turns pink and the smell of flour comes out.
  2. On the other hand, add 1 egg yolk to the strained yogurt and whisk well until homogenized.
  3. Slowly add 3 glasses of water to the yogurt mixture, whisking constantly. Instead of water, you can use chicken stock or broth if you have it.
  4. Slowly add the mixture into the soup pot with the roasted flour and continue whisking. Meanwhile, put your saucepan on low heat.
  5. Adjust the consistency of your soup with the remaining two glasses of water.
  6. At the stage of serving, melt 2 tablespoons of butter in a sauce pan and add the dried mint, froth and share over the soups in the bowls. Serve hot. Bon Appetit!
