You don't have rice at home and you don't have much time, but if you have a spoon of flour, you can have delicious plateau soup in minutes with this practical recipe. This soup, which we can also call yoghurt flour soup, is served with mint butter sauce. Enjoy your meal !
Heat the olive oil and butter in a soup pot. Being careful not to burn the oil, add the flour and fry for 2-3 minutes until the oil turns pink and the smell of flour comes out.
On the other hand, add 1 egg yolk to the strained yogurt and whisk well until homogenized.
Slowly add 3 glasses of water to the yogurt mixture, whisking constantly. Instead of water, you can use chicken stock or broth if you have it.
Slowly add the mixture into the soup pot with the roasted flour and continue whisking. Meanwhile, put your saucepan on low heat.
Adjust the consistency of your soup with the remaining two glasses of water.
At the stage of serving, melt 2 tablespoons of butter in a sauce pan and add the dried mint, froth and share over the soups in the bowls. Serve hot. Bon Appetit!

Strained Yogurt:
Strained Yogurt is a thick, protein-rich dairy product obtained by removing its whey. Its high protein content is excellent for muscle development and sustained satiety. The straining process can lower lactose levels, potentially making it easier to digest for some. It's a good source of probiotics that support gut microbiota and calcium essential for strong bones. It pairs perfectly with garlic, olive oil, and fresh mint in savory appetizers, or with honey and fruits for breakfast or dessert.
Flour:
Flour is a fundamental foodstuff obtained by grinding grains. It provides our body with a long-lasting energy source, especially through complex carbohydrates. Varieties like whole wheat flour, thanks to their high fiber content, support digestive health, provide a feeling of fullness, and help stabilize blood sugar levels. It also contains essential B vitamins (especially B1, B3, B9) and important minerals such as iron and magnesium, which are crucial for nervous system functions, energy production, and blood formation. It is versatile in the kitchen; forming the base for baked goods like bread and pastries when combined with milk, eggs, and yeast, while also being used to thicken sauces or create harmonious flavors with vegetables.
Egg Yolk:
Egg yolk is rich in protein, choline (critical for brain and liver health), vitamins D and A, and powerful antioxidants like lutein and zeaxanthin. It notably supports eye health, contributes to bone development, and strengthens cognitive functions. Its healthy fat content provides a sense of satiety. It's an excellent binder and flavor enhancer in savory sauces like béchamel, mayonnaise, and Hollandaise, as well as in sweet applications like pastry creams.
Olive Oil:
Olive oil, especially in its extra virgin form, is a powerful source of health benefits due to its high content of polyphenol antioxidants and monounsaturated fatty acids (oleic acid). It supports heart health by helping to lower bad cholesterol (LDL) and raise good cholesterol (HDL). With its anti-inflammatory properties, it reduces inflammation in the body, prevents cell damage, and provides protection against chronic diseases. It supports the digestive system and contributes to skin health. An indispensable part of Mediterranean cuisine, it pairs wonderfully with salads, vegetable dishes, fish, legumes, and fresh bread.
Butter:
Butter is a rich, flavorful fat derived from milk. It contains fat-soluble vitamins like A, D, E, and K2, along with healthy fatty acids, serving as an energy source. It's easily digestible. Butter enhances the taste of meals and rice dishes, is spread on bread, or used in sauces. It's indispensable for breakfast tables and various recipes.
Dried Mint:
Dried Mint is a kitchen staple. It's particularly effective in soothing the digestive system, helping alleviate bloating and gas. Its antioxidant content supports immunity. Known for its refreshing properties, it pairs wonderfully with yogurt-based dishes, lentil soup, lamb, and various salads.
