Salt 1/2   Cup
Honey 1   Tsp (large)
Lemon 1/2   Qty

Cumin 1/4   Tsp
Thyme (Dry) 1   Tsp

Steps:

  1. For marinating, put 7-8 glasses of cold ice water and 1/2 glass of salt in a deep bowl and mix. Add fresh herbs (may also have stems), honey, and half a lemon that you squeezed together with the peel into the water.
  2. Submerge the chicken breasts in this marinating broth by placing a weight (like a plate) on them so that they do not float up. Keep in the refrigerator for a minimum of 12 hours and a maximum of 48 hours.
  3. Remove the rested chicken breasts from the water, wash and dry thoroughly. Mix it with a spoonful of oil, black pepper and salt. Stack on top of each other and wrap in cling film and freeze in the freezer. (Minimum 2 hours)
  4. When you are going to consume frozen chicken, take it out of the freezer and slice it into thin, knife-edge thick leaves (keeping the knife upright).
  5. For the sauce, finely chop the onion. (You can add a clove of garlic) Heat the butter and oil in the pan and fry it until it turns pink. Add grated tomatoes and tomato paste, 1 teaspoon of sugar, 1 teaspoon of salt and spices. Add 1 glass of hot water and cook for 5-6 minutes.
  6. Heat a spoonful of butter in the pan. Sweat the sliced frozen chicken breasts into the pan one by one and fry one side lightly. If you wish, take it into the cooking sauce pan and mix it. Or take it on a serving plate, pour the sauce over it and serve hot.
  7. Note: You can serve your chicken doner with sauce with fried potatoes, tomatoes, peppers, pickles and rice. Bon Appetit!
