Wash the fish thoroughly so that no black remains on the insides. Make 2-3 scratches on the diagonal on the sides of the fish that have been drained and dried with a paper towel.
Peel and crush the garlic for marination. Grate the onion, mix with salt, pepper, lemon juice and olive oil. Put the fish in the sauce and rub it with your hands. Cover and rest in the refrigerator for at least 1/2 hour.
Heat the cast iron skillet well, oil it with a brush and place the fish skin down. Cook on both sides for 4-5 minutes until golden brown.
Serve your cooked fish hot, without waiting, with onion fries and arugula salad. Enjoy your meal!
