Nailing

Corn flour roasting, known as nailing or Kuymak, is a special traditional meal that is widely made in the Black Sea Region and consumed especially in breakfasts. Although the cheese used varies from the region to the region, it is usually made with Trabzon cheese or colot cheese. Enjoy your meal!

Cornflour (Thick) 4   Tbsp
Trabzon Cheese (Any Cheese Melting) 300   Grams
Butter (Preferably Trabzon) 4   Tbsp
Water 2   Cup

Steps:

  1. Melt the butter in a copper pan with a handle and heat it on low heat without burning it. When the oil becomes foamy, add coarsely ground corn flour (corn semolina) gradually. Stir continuously with a wooden spoon until the cornmeal turns brown.
  2. Slowly add 1 glass of cold water to the roasted corn flour and continue mixing. When the water is gone, add 1 more glass of water and eat it. When the corn flour swells, add the shredded cheeses and continue mixing quickly.
  3. When the nail colors take color, the cheeses will be melted and circumcised. Check it by ventilation. You can take the nailing hot and serve with fresh corn bread (or village bread). For an authentic presentation, prepare and treat copper fields. Enjoy your meal!
