Barley Noodle Soup

This soup, one of the traditional and classic soups of Turkish cuisine, with few ingredients, is both very practical, economical and fast.

Orzo 1   Cup
Tomato (Or 1 Cup Tomato Puree) 3   Qty
Butter 1   Tbsp
Olive Oil 1   Tbsp
Tomato Paste 1   Tbsp
Powdered Red Pepper 1   Tsp (large)
Parsley (Finely Chopped) 1   Pinch

Steps:

  1. Peel the tomatoes and grate them. Instead, you can use ready-made tomato puree during winter months.
  2. In a soup pot, heat the butter and oil over medium heat. Roast the noodles until they turn slightly pink. Add grated tomatoes and fry together for 1-2 minutes.
  3. Add 4 cups of hot water. Add spices and salt. Reduce the heat and cook until the noodles become soft.
  4. Remove the cooked soup from the heat. Add half of the finely chopped parsley while the soup is hot and stir. Close the lid, let it rest for 4-5 minutes, decorate with the remaining parsley and serve hot.
  5. Note: You can serve this soup with freshly ground black pepper, chili pepper and lemon according to your taste. Enjoy your meal!
