Bulgurlu Tzatziki is a light and refreshing appetizer made by adding bulgur to the classic tzatziki. An indispensable taste of the summer months with the wonderful harmony of yoghurt, cucumber, mint and bulgur. It is very practical to prepare and is one of the refreshing and healthy options of Turkish cuisine.
Grate the cucumbers: Grate the cucumbers using the large-hole side of the grater.
Mix the ingredients: In a bowl, mix the grated cucumber, fine bulgur, salt and dried mint thoroughly and let it sit for 15 minutes. This is enough to soften the bulgur.
Add yoghurt and other ingredients: Add yoghurt, grated garlic, large pieces of walnuts and finely chopped fresh mint. Mix all ingredients thoroughly.
Serve: Place the prepared bulgur tzatziki on a serving plate. If you wish, you can serve it by adding walnuts, fresh mint leaves and olive oil. Enjoy your meal!

Yogurt:
Yogurt, a fermented milk product, supports the digestive system and helps balance gut flora due to its rich probiotic content. This contributes to strengthening the immune system. It is also a high-quality source of protein and calcium, important for bone health and muscle development. With its slightly sour taste, it pairs perfectly with fruits, granola, or honey for breakfast. In main dishes, it adds flavor as the main component of cacık or various mezzes.
Fine Bulgur:
Fine bulgur, a versatile whole grain derived from wheat, is packed with fiber, B vitamins, and essential minerals. Its low glycemic index helps regulate blood sugar, promotes digestive health, and provides sustained satiety. Ideal for dishes like kısır, çiğ köfte, and lentil patties, it pairs wonderfully with fresh herbs, tomato paste, and pomegranate molasses.
Cucumber:
Cucumber, with over 95% water content, is an excellent hydration source. Its low-calorie profile, coupled with Vitamin K and antioxidants, supports bone health and may help reduce inflammation. It also contains silica, known for its skin benefits. Cucumber pairs wonderfully with yogurt, tomatoes, mint, and dill in dishes like salads and tzatziki.
Dried Mint:
Dried Mint is a kitchen staple. It's particularly effective in soothing the digestive system, helping alleviate bloating and gas. Its antioxidant content supports immunity. Known for its refreshing properties, it pairs wonderfully with yogurt-based dishes, lentil soup, lamb, and various salads.
Fresh Mint:
Fresh mint soothes the digestive system, alleviates nausea, and freshens breath with its invigorating effect. Its antioxidant content supports immunity, while its calming properties can help reduce stress. It pairs wonderfully with fruits like lemon, cucumber, and strawberries. It can also be used as a flavor enhancer in tzatziki, salads, and certain main dishes. An essential for summer drinks and desserts.
Garlic:
Garlic, thanks to its allicin compound, offers strong antioxidant and anti-inflammatory properties. It can boost the immune system, increasing resistance against illnesses. Furthermore, it contributes to cardiovascular health by helping regulate blood pressure and balance cholesterol levels. Widely used in traditional medicine, garlic is also known for its digestive support effects. An indispensable ingredient in meat dishes, vegetable sautés, and Mediterranean cuisine, it pairs wonderfully with herbs like rosemary and thyme.
Walnut:
Walnut kernel is a nutritious nut distinguished by its rich omega-3 fatty acids (ALA) and powerful antioxidant content. It particularly supports brain functions, protects heart health, and helps reduce inflammation in the body. Furthermore, it contains fiber, which contributes to digestive health, and protein, which provides satiety. It's a wonderful companion in desserts (baklava, cakes), breakfast cereals, yogurt, salads, and cheese platters.
