The most enjoyable and delicious way to consume vegetables. It gains a different dimension with garlic yoghurt and hot pepper butter sauce. Although it lingers a little, it deserves praise for its elegance and taste. Here you go, bon appetit!
As a preliminary preparation, separate the cauliflowers from flowers and cut off the very hard root parts, wash them in plenty of water and drain them.
Boil 4-5 glasses of water in a deep pot by whisking together the juice of half a lemon, 1 tablespoon of rock salt and 1 spoon of flour.
Put the cauliflower in boiling floury water and boil it for 2-3 minutes. Make sure that the cauliflower florets are the same size and do not fall apart so that they cook evenly.
Pour the soda into a deep bowl, take the boiled cauliflower here and rest it in soda for 10 minutes.
Remove the cauliflowers resting in soda on a paper towel and drain the excess water.
For the breading process, heat the oil in a deep pan and put it on medium heat.
For the pane, whisk 2 eggs thoroughly in a deep bowl.
Prepare a mixture of baking soda, flour and salt in a separate bowl.
Prepare the breadcrumbs on another plate as the last layer of breadcrumbs.
Dip the drained and dehydrated cauliflowers first into the flour mixture, then in the beaten egg, and finally in breadcrumbs, fry them in hot oil until they turn pink, then remove them on a paper towel.
For the sauce, crush the fresh garlic, finely chop the fresh mint, add it to the strained yogurt you whipped together with salt, sumac, freshly ground black pepper, red pepper flakes and a tablespoon of olive oil.
Put your yogurt sauce in a small bowl that you will put in the middle of a flat serving plate. Serve warm or cold, arranging the fried cauliflower neatly around it. Enjoy your meal!

Cauliflower:
Cauliflower is a versatile vegetable rich in vitamins C, K, B6, and folate. Potent antioxidants like sulforaphane help reduce cellular damage and prevent inflammation. Its high fiber content supports digestive health, while choline is crucial for brain functions. Thanks to its dense texture, it can be roasted, pureed, or added to soups. It pairs wonderfully with ingredients like cheese, cream, garlic, turmeric, and lemon.
Black Pepper:
Black pepper, a kitchen staple, offers not just flavor but also significant health benefits. Thanks to piperine, its active compound, it boasts powerful antioxidant properties, helping to combat free radicals. It can stimulate the digestive system, enhancing nutrient absorption and notably increasing the bioavailability of curcumin found in turmeric. Additionally, it's effective in reducing gas and bloating. It also has a mild metabolism-boosting effect. With a wide range of uses from red meats to poultry, vegetable dishes to soups, it pairs excellently. It harmonizes perfectly with spices like cumin and coriander, as well as ingredients like lemon and garlic, adding depth to dishes.
Flour:
Flour is a fundamental foodstuff obtained by grinding grains. It provides our body with a long-lasting energy source, especially through complex carbohydrates. Varieties like whole wheat flour, thanks to their high fiber content, support digestive health, provide a feeling of fullness, and help stabilize blood sugar levels. It also contains essential B vitamins (especially B1, B3, B9) and important minerals such as iron and magnesium, which are crucial for nervous system functions, energy production, and blood formation. It is versatile in the kitchen; forming the base for baked goods like bread and pastries when combined with milk, eggs, and yeast, while also being used to thicken sauces or create harmonious flavors with vegetables.
Rock Salt:
Rock salt is a natural, mineral-rich type of salt. It supports the body's electrolyte balance and aids hydration. Trace minerals such as magnesium and potassium are vital for nerve and muscle functions. It can also help maintain pH balance. Compatible with grilled meats, salads, and vegetables, it's also favored for pickling and brining.
Sparkling Water:
Baking soda (sodium bicarbonate) neutralizes stomach acid, alleviating indigestion and reflux. Used as a mouthwash, it eliminates bad odors and gently cleans teeth. It also helps soothe skin irritations and insect bites. Typically consumed or applied mixed with water. It reacts with acidic substances like lemon juice or vinegar, making it effective in cleaning too.
Liquid Oil:
Liquid oils (sunflower, olive, etc.) are essential kitchen ingredients that add flavor to dishes and contain healthy unsaturated fatty acids and vitamin E. Ideal for frying, salad dressings, baking, and sautéing. They pair perfectly with vegetables, meats, legumes, and grains. They offer easy cooking.
Crumbs Bread:
Breadcrumbs, made from dried bread, are a versatile ingredient adding crispiness to dishes. Their fiber content aids digestion, while those from enriched flours may offer B vitamins (B1, B3) for energy metabolism. They can also contain minerals like iron and magnesium. Ideal for coating meats, poultry, fish, and binding meatballs or vegetable croquettes. They pair exceptionally well with cheese, garlic, fresh herbs, and various spices, enhancing flavor and texture in gratins and stuffings.
Egg:
Eggs are a highly bioavailable protein source, essential for muscle growth and repair. Rich in B12, Vitamin D, selenium, and choline, they support brain function, nervous system health, and energy production. Lutein and zeaxanthin pigments aid eye health, reducing the risk of age-related macular degeneration. Despite their cholesterol content, eggs typically don't adversely affect blood cholesterol in most healthy individuals. A breakfast staple, eggs pair wonderfully with various ingredients like cheese, spinach, mushrooms, avocado, and whole-wheat bread.
Fresh Garlic:
Fresh garlic is a powerhouse for cardiovascular health, aiding in blood pressure regulation and lowering bad cholesterol. Rich in potent antioxidants and anti-inflammatory compounds, it's a versatile flavor enhancer. Perfect in Mediterranean dishes, grilled meats/veggies, and pasta sauces.
Strained Yogurt:
Strained Yogurt is a thick, protein-rich dairy product obtained by removing its whey. Its high protein content is excellent for muscle development and sustained satiety. The straining process can lower lactose levels, potentially making it easier to digest for some. It's a good source of probiotics that support gut microbiota and calcium essential for strong bones. It pairs perfectly with garlic, olive oil, and fresh mint in savory appetizers, or with honey and fruits for breakfast or dessert.
Fresh Mint:
Fresh mint soothes the digestive system, alleviates nausea, and freshens breath with its invigorating effect. Its antioxidant content supports immunity, while its calming properties can help reduce stress. It pairs wonderfully with fruits like lemon, cucumber, and strawberries. It can also be used as a flavor enhancer in tzatziki, salads, and certain main dishes. An essential for summer drinks and desserts.
