Crispy Cauliflower

The most enjoyable and delicious way to consume vegetables. It gains a different dimension with garlic yoghurt and hot pepper butter sauce. Although it lingers a little, it deserves praise for its elegance and taste. Here you go, bon appetit!

Ingredients:

For 4 people
🕐 Preparation: 15 min.      🕐 Cooking: 20 min.
For the Cauliflower:
Cauliflower (Medium size) 1 Qty
Black Pepper 1 Tsp
Water (Boiled) 5 Cup
Flour 1 Half Cup
Rock Salt 1 Tsp (large)
Sparkling Water 1 Bottle
For the Roast:
Liquid Oil 2 Cup
Crumbs Bread 1 Half Cup
Egg 2 Qty
For the Sauce:
Fresh Garlic 1 Clove
Strained Yogurt 1 Half Cup
Fresh Mint 1 Pinch
Salt 1 Tsp

Instructions:

  1. As a preliminary preparation, separate the cauliflowers from flowers and cut off the very hard root parts, wash them in plenty of water and drain them.
  2. Boil 4-5 glasses of water in a deep pot by whisking together the juice of half a lemon, 1 tablespoon of rock salt and 1 spoon of flour.
  3. Put the cauliflower in boiling floury water and boil it for 2-3 minutes. Make sure that the cauliflower florets are the same size and do not fall apart so that they cook evenly.
  4. Pour the soda into a deep bowl, take the boiled cauliflower here and rest it in soda for 10 minutes.
  5. Remove the cauliflowers resting in soda on a paper towel and drain the excess water.
  6. For the breading process, heat the oil in a deep pan and put it on medium heat.
  7. For the pane, whisk 2 eggs thoroughly in a deep bowl.
  8. Prepare a mixture of baking soda, flour and salt in a separate bowl.
  9. Prepare the breadcrumbs on another plate as the last layer of breadcrumbs.
  10. Dip the drained and dehydrated cauliflowers first into the flour mixture, then in the beaten egg, and finally in breadcrumbs, fry them in hot oil until they turn pink, then remove them on a paper towel.
  11. For the sauce, crush the fresh garlic, finely chop the fresh mint, add it to the strained yogurt you whipped together with salt, sumac, freshly ground black pepper, red pepper flakes and a tablespoon of olive oil.
  12. Put your yogurt sauce in a small bowl that you will put in the middle of a flat serving plate. Serve warm or cold, arranging the fried cauliflower neatly around it. Enjoy your meal!
