Edema Relief Cabbage Soup (Sour Cabbage Soup with Turmeric and Parsley) Recipe
White cabbage and parsley, among other well-known benefits, are also very good anti-edematous agents. Turmeric is a good dietary aid as it regulates blood sugar. Experts recommend consuming raw green vegetables in a healthy diet. This soup, which is prepared by adding plenty of parsley to the cooked cabbage, is a good alternative in diet menus. Cut the cabbage in 2 or 4 according to its size and peel the outer skins. Finely chop and press into plenty of water with 1/4 lemon juice squeezed.
Peel the onion and chop coarsely.
Saute the onions in a deep pot until they become transparent and put the chopped cabbage you have drained into the pot. Turn it upside down and turn it 1-2 turns and add enough hot water to cover it. Add 1/2 teaspoon of freshly squeezed lemon juice and 1 teaspoon of salt.
Cover the pot and cook for about half an hour, until the cabbage is soft. Meanwhile, remove 1 bunch of parsley from its thick stems and wash it thoroughly.
When the cabbage is soft, take it off the heat and keep it aside until it cools.
Roughly shred the cooled cabbage with a hand blender. Add the parsley and pull 3-4 turns. Add turmeric, cayenne pepper and salt and take another turn.
Check the salt and spices of your soup that you have heated at the time of service and serve it with lemon slices. Enjoy your meal!
