For the meal:
Eggplant 3 Qty
Liquid Oil 1 Cup
Salt 1 Tsp (large)
For the Service:
Yogurt 1 Cup

Instructions:

  1. Prepare the eggplants: Wash the eggplants, cut them into rings and leave them in salt water for 15-20 minutes. This process will help reduce the bitterness of the eggplants.
  2. Drain the water: Strain the salty water from the eggplants and dry them thoroughly with a clean cloth.
  3. Heat the oil: Heat the oil in a pan over medium heat.
  4. Fry the eggplants: Carefully drop the eggplants into the hot oil and fry until golden on both sides.
  5. Serve: Put the yoghurt on a serving plate, place the fried eggplants on it. You can decorate with tomato sauce and parsley. Enjoy your meal!
