Eggplant Omelet Recipe

Instructions:

Prepare the eggplants: Chop the eggplants into small cubes and soak in salted water for 30 minutes. This process reduces the bitterness of the eggplants.

Dry the eggplants: After taking them out of salt water, dry the eggplants thoroughly with paper towels.

Fry the eggplants: Put a small amount of oil in the pan and heat it slightly. Add the eggplants and fry lightly.
