  2. Dry the eggplants: After taking them out of salt water, dry the eggplants thoroughly with paper towels.
  3. Fry the eggplants: Put a small amount of oil in the pan and heat it slightly. Add the eggplants and fry lightly.
  4. Prepare the egg: Beat the eggs in a separate bowl. Add little salt and optional white cheese, mix.
  5. Cook the omelet: Pour the egg mixture over the fried eggplants. When one side is cooked, turn it over and cook the other side.
