Steps:

  1. Boil the pasta: Boil the pasta for the time specified on the package. After reserving half a ladle of pasta water for the filling, drain the water.
  2. Cook the eggplant and pepper: Cook the eggplant and pepper cut into small cubes with oil, covering the pot, until they soften.
  3. Add tomato paste and garlic: After the eggplant and pepper soften, add tomato paste and garlic and fry.
  4. Add tomatoes and spices: Add diced tomatoes and spices and mix well. Add half a ladle of pasta boiling water into the mixture.
  5. Combine pasta and mixture: Add the boiled pasta to the mixture and continue cooking for another 5 minutes. Then serve. Enjoy your meal!
