Steps:

Boil the pasta: Boil the pasta for the time specified on the package. After reserving half a ladle of pasta water for the filling, drain the water.

Cook the eggplant and pepper: Cook the eggplant and pepper cut into small cubes with oil, covering the pot, until they soften.

Add tomato paste and garlic: After the eggplant and pepper soften, add tomato paste and garlic and fry.
