Green Hummus

Hummus is a Middle Eastern and Mediterranean cuisine appetizer and is traditionally made by combining boiled chickpeas with tahini, olive oil and lemon and flavoring with seasonings such as cumin and garlic. You can prepare this classic appetizer with basil and fresh greens and offer a different version. Enjoy your meal!

Ingredients:

For: 4 People
Prep: 30 Min
Boiled Chickpeas ((Without Shell)) 3   Cup
Tahini 1   Half Cup
Parsley ((Finely Chopped)) 1   Bunch
Lemon Juice ((Fresh Squeezed)) 1   Half Cup
Dill 1   Bunch
Olive Oil 1   Half Cup
Fresh Onion (Only The Green Parts) 2   Bunch
Fresh Basil 1/4   Bunch
Cumin 1   Half Tbsp
Salt 1   Half Tbsp
Granulated Sugar 1   Tsp
Black Pepper (Freshly Ground) 1   Tsp

Steps:

  1. Wash the chickpeas, soak them overnight if possible, put them in a pot and boil them with enough water to cover them.
  2. Finely chop the parsley, dill, fresh basil leaves and spring onion stalks.
  3. Run the boiled chickpeas through cold water, peel off their skins and put them back in the pot.
  4. Add lemon juice, olive oil and spices to the chickpeas in the pot and pass them through a hand blender.
  5. When the chickpea paste cools down, add the tahini and mix. Adjust the salt and spice balance to your taste.
  6. Finally, add the chopped greens to the mixture and blend.
  7. Heat a couple of spoons of olive oil in a pan and add red pepper flakes and froth. Serve your green hummus on the serving plate by garnishing it with pepper oil. Enjoy your meal!
  8. Note: If you want to add greens to the greens of hummus, you can prepare and use green parsley and basil oil instead of pepper oil.
