Gummy Alaçatı Custard

Mastic Mastic takes its name from the gum tree resin produced on Chios Island in the Aegean Sea. This tree is also frequently seen around Çeşme and on the Mediterranean coast. Due to its unique aroma, it is used in kitchens as well as other areas of use. One of the traditional desserts of Turkish cuisine, pudding with mastic gum has been among the indispensable tastes since ancient times. Enjoy your meal!

Ingredients:

For 4 people
🕐 Preparation: 10 min.      🕐 Cooking: 20 min.
Mastic Gum 4 Clove
Milk 1 Liters
Butter 2 Tbsp
Flour 3/4 Cup
Granulated Sugar 1 Half Cup
Walnut 1 Rounded Tbsp
Cracked Hazelnuts 1 Rounded Tbsp
Vanilla 1 Package

Instructions:

  1. Melt the butter in a saucepan and add the flour. Cook for 3-4 minutes stirring constantly.
  2. While continuing to mix, gradually add the milk to the roasted flour.
  3. Stir constantly until the custard has a smooth consistency. If it becomes rough, pass it through the blender.
  4. Crush 3-4 teeth (5gr) mastic gum in a mortar and grind into powder. You can use up to 1 tablespoon of mastic jam instead of mastic.
  5. Add granulated sugar, crushed mastic gum and powdered vanilla to the pudding and mix. When the custard thickens, remove it from the fire. Do not thicken too much as it will solidify as it cools.
  6. Divide the custard you get from the fire into glass cups. When they come to room temperature, decorate them with finely ground walnuts, hazelnuts or pistachios, put them in the refrigerator, let them rest for 1-2 hours and serve cold. Enjoy your meal!
  7. Note: You can also serve this pudding by garnishing it with slices of fresh fruit.
