Meatless Raw Meatballs

Original raw meatballs are made by cooking thin bulgur for meatballs and lean ground meat for raw meatballs by kneading them with plenty of spices. It is possible to achieve a taste very close to this in your home. Vegetarian raw meatballs are actually a spicy bulgur meatball. A delicious starter for almost any table. Ingredients:

For 4 people

For the Meatball:
Fine Bulgur (Meatballs) 2 Cup
Dry Onion 2 Qty
Tomato Paste 2 Tbsp
Pepper Paste 2 Tbsp
Ketchup 2 Tbsp
Isot 2 Tbsp
Cumin 1 Tsp
Garlic 2 Clove
Salt 1 Tsp (large)
Meat Broth 2 Cup
For the Service:
Pomegranate Syrup 3 Tbsp
Curly Lettuce 1 Bunch
Chili Pepper 1 Tsp
Lemon Juice (Fresh-squeezed) 1 Half Cup
Rosemary (Pickle) 10 Qty
Lemon 8 Slice
Pickled Cucumber 6 Qty

Instructions:

  1. Put the bulgur in a deep mixing bowl, add salt and pour the warm broth on it to wet it all over. Cover with cling film and rest for 10-15 minutes until the bulgur swells.
  2. Peel the onions and garlic and process them in a food processor until fine.
  3. Add the swollen bulgur, tomato paste and spices to the robot and start pulling. Mix the ingredients with the help of a spatula, stopping occasionally.
  4. Add olive oil, pomegranate syrup and lemon juice at the last stage and mix for 1 more turn.
  5. On the other hand, finely chop the outer leaves of the curly lettuce and add to the mixture. Check the salt and spices and adjust to your taste.
  6. Arrange the lettuce core leaves on a wide serving plate. Divide your raw meatballs, which you have formed into meatballs by squeezing with your hand, on lettuce leaves and drizzle with olive oil and pomegranate syrup. If desired, you can serve cold with lemon slices, greens, rosemary and gherkin pickles. Enjoy your meal!
