The Persian word piyaz means "onion" in Turkish. In Turkish cuisine, piyaz is made with boiled dried beans and onions. It is served alongside meatballs and grills. Actually, mashed potatoes are a potato salad with bean slaw. A hearty, practical, delicious and different side dish that can be made with few ingredients. Enjoy your meal!
Add enough water to cover the potatoes and boil them for 30 minutes on medium heat.
Check if the potatoes are boiled by sticking a fork and remove them from the water and peel them while they are hot. Set aside to cool. Wait for the potatoes to cool before chopping, so they won't fall apart and are easy to chop.
Chop the cooled potatoes into large cubes. On the other hand, divide the onion into 2 and slice thinly slices in half-moon shape. Add 1 pinch of salt and rub lightly and rinse.
Finely chop the peppers and tomatoes and mix all the ingredients in a deep bowl.
For the sauce, whisk olive oil and the juice of half or a lemon and add salt and pepper.
Add boiled and cold dried beans, add the sauce and mix lightly.
Chill your salad in the refrigerator for 10-15 minutes. You can serve it with red pepper flakes, sumac and garnish with lemon slices and a few olives. Enjoy your meal!
