Tarhana Soup With Sausage

Tarhana, one of the classic soups of Turkish cuisine; It is a very nutritious food obtained by drying, grinding and sifting the dough kneaded with wheat, yoghurt, pepper, salt, onion, tomato and aromatic herbal substances after fermentation. Tarhana was brought to Anatolia by the Turks and Mongols who migrated from Central Asia, and it is a very preferred soup, especially in the winter months. Enjoy your meal!

Ingredients:

For 4 people
🕐 Preparation: 5 min.      🕐 Cooking: 20 min.
For the Soup:
Pepperoni 100 Grams
Tarhana (Dust) 6 Tbsp
Butter 1 Tbsp
Chili Pepper 1 Half Tbsp
Water 6 Cup
For the meal:
Liquid Oil 1 Tbsp
For the Sauce:
Butter 2 Tbsp
Powdered Red Pepper 1 Tsp (large)
Pepperoni 50 Grams

Instructions:

  1. Wet 6 tablespoons of tarhana with 1 glass of warm water and leave it for 10-15 minutes.
  2. Whisk the softened tarhana with a fork and smooth it thoroughly.
  3. Peel the sausage and chop it into tiny pieces (the size of backgammon dice).
  4. Heat oil and butter in a soup pot. Put the chopped sausages in the pot and turn them for 1-2 minutes and remove from the fire.
  5. Set aside half of the roasted sausages to serve for the sauce. Reheat the pot.
  6. Take the mashed and softened tarhana in the pot and slowly add 4 glasses of cold water. Cook for 10-15 minutes, stirring constantly, until the soup has a smooth consistency. Check the taste and add salt, pepper and hot cayenne pepper as desired.
  7. Turn the sausages you have reserved during the serving stage with 2 spoons of butter and add red pepper powder to make a sauce.
  8. Serve the soups that you share in bowls hot, by drizzling sausage and pepper butter sauce. Enjoy your meal!
  9. Note: You can also serve your soup with sausage and dried mint.
