Chicken Cold Sandwich

Cold sandwiches that you can prepare and pack with a few simple ingredients, or that you can take with you when you need a quick meal at home, make life easier. One of the easiest is the boiled cold chicken sandwich. Enjoy your meal!

Ingredients for Sandwich:
Toast Bread (Wholegrain) 2   Slice
Mayonnaise 1   Tbsp
Strained Yogurt 1   Rounded Tbsp
Salt 1   Tsp
Lemon Juice 1   Half Tbsp
Grain Black Pepper (Freshly Ground) 1   Tsp
Fresh Onion (Finely Chopped) 4   Sprig
Pickled Cucumber (Finely Chopped) 4   Qty
Lettuce (Stomach) 4   Leaves

Steps:

  1. Wash the skinless chicken breasts, add enough hot water to cover them and put them on the stove.
  2. Peel the onion and cut it into four. Add salt, pepper, bay leaves and onions to the chicken and cook until they are shredded (approximately 30 minutes).
  3. Take the cooked chicken out onto a plate, cool it and shred it with a fork or with your hands. (If you have leftover chicken from a previous meal in your cupboard, you can shred it and use it in this sandwich.)
  4. For the sauce, mix mayonnaise and yogurt with finely chopped spring onions and pickled gherkins. Season with a few drops of lemon, salt and pepper.
  5. Wash the lettuce leaves and dry them with a paper towel. Spread half of the sauce on two slices of bread. Place the shredded and cooled chicken meat on the sauced breads.
  6. Cover chicken meat with lettuce leaves. Cover the sandwiches with the remaining mayonnaise dressing on the inside of the other two slices and cut them in half with a sharp knife. Enjoy your meal!
  7. Note: If you are going to consume the sandwiches later, wrap the breads in cling film without breaking them and store them in the refrigerator.
