Instructions:

  1. Wash the chicken legs and put them in the pot. Peel the onion and divide it into 4. Peel the garlic and chop finely. Peel the carrot and chop it roughly. Peel and finely chop 1 thumb of ginger.
  2. Add 5-6 glasses of hot water over the chicken. Add onion, carrot, garlic, ginger, turmeric, bay leaf, lemon zest, cloves, black pepper and salt and bring to a boil over medium heat.
  3. When the chicken meat becomes soft and can be separated from the bone, remove all the ingredients from the pot with a ladle. (If you want more vegetable flavor, you can crush the ingredients through a wire strainer) Add the vermicelli to the chicken broth that you boiled over medium heat and stir. Shred the white parts of the cooked chicken meat and add them to the soup.
  4. For the dressing, whisk the egg yolk, flour and lemon juice until you get a smooth consistency. Take 1 ladle of boiling chicken broth and add it to the marinade little by little and let it cool.
  5. When the noodles become soft, slowly add the seasoning and remove from the heat. If you wish, you can fry red pepper flakes in butter and decorate it with this sauce or add finely chopped parsley. Serve hot with plenty of black pepper and lemon. Let there be healing!
