Steps:

  1. Boil the lentils: Wash the green lentils thoroughly and boil them in plenty of water for about 15-20 minutes until they soften. After boiling, drain and set aside.
  2. Onion and tomato paste: Fry the chopped onion in oil until it turns pink. Then add the tomato paste and fry for another 1-2 minutes.
  3. Tomatoes and potatoes: Add chopped tomatoes and cook for a few minutes. Then, add the diced potatoes and boiled lentils to the pot.
  4. Spices and water: Add salt, black pepper, cumin and red pepper flakes. Add enough hot water or vegetable stock to cover it.
  5. Cook the meal: Cover the pot and cook over medium heat until the potatoes soften (about 20-25 minutes). Check by stirring occasionally.
  6. Serve: Remove from heat and garnish with parsley or dill, optional. Serve hot with rice or yoghurt.
