Homemade Oil Lamp Ring

In Turkish Islamic culture, you can easily make these sesame-filled tiny simits, which are made abundantly at oil lamps and distributed for charity, at home. This crispy flavor will bring variety to your breakfast tables. Bon Appetit!

Ingredients:

For 4 people
🕐 Preparation: 15 min.      🕐 Cooking: 15 min.
For the Turkish Bagel:
Flour 3.5 Cup
Butter (Half Pack) 125 Grams
Yogurt 2 Tbsp
Liquid Oil 1/2 Half Cup
Water 1 Half Cup
Salt 1 Tsp
Vinegar 1 Tbsp
Baking Powder 1 Package
Granulated Sugar 1 Half Tbsp
Egg Yolk 1 Qty
Mahaleb Cherry 1 Tsp (large)
For the Exterior Coating:
Sesame 1 Bowl
Egg White 1 Qty

Instructions:

  1. Take the butter out of the fridge and bring it to room temperature. In a deep mixing bowl, first take the dry ingredients (flour, baking powder, sugar, salt, mahaleb) and mix them and make a small space in the middle.
  2. Add oil, room temperature butter and yoghurt to the middle of the pool you have opened and knead a soft dough that will not stick to the hand, stretch it and let it rest in the fridge for half an hour.
  3. Preheat the oven to 180 degrees. Take walnut-sized pieces from the rested dough and make a roll and form a bagel by joining the ends.
  4. Whisk the egg white well and mix. Roast the sesame seeds in a pan without oil for five minutes, turn them pink and put them in a bowl.
  5. Line a flat baking tray with baking paper. Dip the prepared bagels first in egg white, then in roasted sesame seeds, put them on the tray and bake for about 20-30 minutes until they turn pink.
  6. Take the oil lamp bagels out of the oven, put them on a paper towel, let them rest for 15 minutes and serve. Bon Appetit!
  7. If you wish, you can also make plain oil lamp bagels by brushing some of the bagels with egg yolk.
  8. Note: You can use black cumin or both instead of sesame.
