Leek Soup

Leek soup is one of the classic flavors in the kitchens with its unique aroma and light structure. Although it is known as "Vichyssoise" in French cuisine, there are various versions served in different cultures that are served hot or cold. Prepared with the balanced harmony of leeks, vegetables and chicken broth, this soup is a nutritious and sophisticated option. Chicken Broth 1   Liters
Milk 1   Half Cup
Ingredients for Chicken Broth:
Whole Chicken 750   Grams
Carrot 1   Qty
Dry Onion 1   Qty
Garlic 2   Clove
Celery Stalk 1   Sprig
Fresh Thyme 1   Sprig
Ginger 1   Slice
Grain Black Pepper 10   Qty
Bay Leaf 1   Qty
Fresh Coriander 1   Tsp
Water 2.5   Liters
Parsley 7   Sprig

Steps:

  1. If your chicken broth is ready, you can start from the direct soup recipe by skipping the following two steps.
  2. Prepare the chicken broth: Put the chicken in a deep saucepan, large chopped vegetables and spices. Add cold water and boil over high heat. After boiling, cook for 4 hours on low heat. Take the foams formed during boiling, do not mix the water.
  3. Strain the chicken broth: Carefully put the cooked chicken broth through a strainer without mixing and put it in another container. After cooling, you can store it in the refrigerator for up to a week or in a deep freezer for up to 6 months.
  4. Chop the vegetables for the soup: Chop the leeks into thin rings, potatoes into small cubes.
  5. Roast the vegetables: Melt the butter over medium heat. Roast leeks, potatoes and garlic with salt.
  6. Cook the soup: When the leeks are softened, add the chicken broth. When boiling, cut the fire, cook until the potatoes are softened.
  7. Pass through the blender: When the potatoes soften, pass the soup through the blender until smooth. Add the milk and mix.
  8. Service: You can serve by adding black pepper and croutons on the soup. Enjoy your meal!
