Turmeric is actually a spice that has been in Turkish cuisine for centuries, but has recently become more popular. You can combine turmeric, which is one of the main spices recommended for health, with rice with its fragrant smell and yellow color, and you can offer it as a different alternative for those who are bored with classic pilafs. Wash and soak the rice in warm, salted water and soak for at least 20 minutes.
Chop the cubed lamb in the size of chickpeas.
Heat the oil in the pressure cooker, add the meat and fry for 2-3 minutes by turning it.
Add enough hot water to cover the meat by 2 inches, close the pressure cooker and cook for 30 minutes.
Add finely chopped onions, carrots, garlic and currants to the cooked and drained meat and fry for 1-2 turns.
Add the hot broth at a ratio of 1:1 to the rice and meat mixture.
Close the lid (without pressure) and cook on low heat for 15 minutes.
During the brewing phase, add 1 teaspoon of turmeric (saffron in saffron rice) that you have dissolved in 1/3 tea glass of hot water to the rice with meat and mix. Cover it with a clean cloth and leave it to infuse for 15 minutes.
Mix the brewed rice for one turn, ventilate and serve warm. Bon Appetit!

Rich in Vitamins C and B6, and manganese, it strengthens the immune system. Its prebiotic fibers contribute to digestive health. It is widely used in dishes ranging from meat dishes to vegetable sautés, pilafs, and soups. It pairs perfectly with garlic, tomatoes, peppers, and red meat.
Currants:
Currants, rich in potent antioxidants and fiber, stand out. They are especially abundant in iron, potassium, and calcium. They support cell regeneration, aid digestion, and contribute to blood sugar balance. They add a unique flavor to pilafs, stuffings, desserts, and salads. They pair well with almonds, walnuts, and cinnamon.
