In a Nutshell:

Ingredients:

For: 4 People
Prep: 30 Min
Cook: 45 Min
Ingredients for Meatball:
Minced Meat (Medium Fat) 350   Grams
Rice (Broken) 1   1/3 Cup
Dry Onion (Finely Grated) 1   Qty
Salt 1   Half Tbsp
Black Pepper 1   Qty
Powdered Red Pepper 1/2   Tsp
Cumin 1/2   Tsp
Flour 1   Tsp (large)
Meat Broth (Hot) 2   Cup
Water 2   Cup
Butter 1   Tbsp
Ingredients for Finishing:
Egg (Yolk) 1   Qty
Ingredients for Dressing:
Lemon (Juice) 1/2   Qty
Flour 2   Tbsp

Steps:

  1. Take the ground meat for 2 times in a deep mixing bowl. In a separate place, peel 1 onion and grate it on the fine-toothed part of the grater. Squeeze the excess juice of the onion between your two palms and add it to the ground beef.
  2. Add a teaspoon of flour, washed broken rice and spices to your meatballs and knead for ten minutes. Cover the kneaded patties and let them rest in the refrigerator for at least 1/2 hour.
  3. Spread 2 tablespoons of flour on a flat tray. Roll your rested meatballs in the palm of your hand and place the meatballs you prepared in the size of hazelnuts on a floured tray.
  4. Boil 2 glasses of water and 2 glasses of broth in a deep saucepan, add a teaspoon of salt and put on low heat.
  5. Take the excess flour from the meatballs through a colander and slowly add it to the boiling water. Be careful not to over mix at this stage.
  6. For its dressing, take the yolk of 1 egg in a bowl. Add the juice of 1/2 lemon and 2 tablespoons of flour to the dressing and whisk until smooth.
  7. When the meatballs are cooked, they will rise above the water. At this stage, take little by little from the boiling meatball water and add it to the seasoning.
  8. Add the seasoning you have added to the meatball by flowing it thinly like a rope. Stir slowly over low heat, take a wing and remove it from the fire. If you wish, add 1 tablespoon of butter and turn off the heat. Serve hot. Bon Appetit!
  9. Note: You can garnish with this sauce and serve by burning red powder or chili pepper in the heated butter for the top while serving. For your small children, you can prepare a smooth and nutritious soup by blending the ace without adding sauce.
