Mix mayonnaise and labneh (fresh cheese or any spreadable cheese) in a bowl and season with salt and freshly ground black pepper. If you like it hot, you can add a teaspoon of red pepper flakes to this sauce.
Wash the curly young lettuce leaves, dry them with a paper towel and cut them into large pieces with your hands. Thinly slice the pickled gherkins.
Spread the cheese mayonnaise mixture on one side of the toast. Place the pickled gherkins. Layer two smoked turkey slices on each sandwich, folding them in half. Place lettuce leaves on them and cover them with other slices of bread.
