Tomato Basil Rice

As it is known, tomatoes get their red color from the antioxidant called lycopene and is an extremely useful food that prevents many diseases. Studies show that it is more beneficial to consume the tomato itself rather than lycopene supplementation. In addition, tomatoes; It also helps reduce the risk of diabetes, heart disease and stroke. Ingredients:

For 6 people

For the Rice:
Rice (Baldo) 2 Cup
Rock Salt 1 Tbsp
Tomato (Planed) 5 Qty
Butter 3 Tbsp
Chicken Broth (Or Drinking Water) 3 Cup
Olive Oil 1 Tbsp
Lemon Juice 5 Drop
Granulated Sugar 1 Tsp (large)
Fine Salt 1 Tsp (large)
For the Presentation:
Fresh Basil 1 Bunch
Cherry Tomatoes 5 Qty

Instructions:

  1. After washing the rice in plenty of water, leave it in two liters of warm water to which you added rock salt for 1/2 hour. Drain the soaked rice and rinse with plenty of water.
  2. On the other hand, keep the tomatoes in boiling water for a few minutes, peel the skins and grate them. Prepare the cherry tomatoes by washing them and dividing them into 2 halves.
  3. Add 2 spoons of butter and olive oil to a common rice pot, add the rice you have drained and rinsed after melting, and fry it slowly by turning it upside down.
  4. When the rice becomes transparent, add the grated tomato and half of the finely chopped fresh basil leaves and fry together for a few minutes.
  5. Add salt, sugar and 3 glasses of hot chicken broth to the roasted rice, reduce the heat and add a few drops of lemon juice. Place the cherry tomatoes on it and close the lid and put on low heat.
  6. Cover the bottom of the rice, which absorbs its water in about 10-15 minutes, and distribute the remaining 1 tablespoon of butter in small pieces over it.
  7. Cover it with a clean cloth, close the lid and let it brew for 10 minutes.
  8. When the rice is warm, ventilate it by turning it upside down, or take it to the serving plate without the tomatoes in mold. Serve warm garnished with fresh basil and cherry tomatoes. Bon Appetit!
