Caesar Sauce

The secret of a magnificent Caesar salad is in this sauce: besides, this sauce is one of the best accompaniments to your chicken or fish dishes. You can also try it on steamed vegetables and canapes with olive paste. Enjoy your meal!

Egg Yolk (Big) 2   Qty
Olive Oil (Extra Virgin) 1   Half Cup
Lemon Juice (Fresh-squeezed) 2   Tbsp
Worcestershire Sauce (Or Balsamic Vinegar) 1   Tbsp
Apple Cider Vinegar 1   Tsp (large)
Fresh Rosemary (Fine Cut) 2   Sprig
Fresh Thyme (Fine Cut) 1   Sprig
Fresh Garlic (Fine Cut) 1   Clove
Parmesan (Finely Grated) 2   Tbsp

Mustard 2   Tbsp

Steps:

  1. Keep the eggs at room temperature and separate the whites and yolks. Take lemon juice in mixing bowl. Add the egg yolks and beat the lemon into the yolks with a whisk.
  2. Then, while it continues to boil, slowly pour the olive oil into the eggs by running it like a twine.
  3. Add the mustard while continuing to whisk.
  4. Chop the fresh herbs as finely as possible with a knife, do not use a rondo. In this way, there will be no unnecessary loss of vitamins and water.
  5. Again, crush the finely chopped fresh garlic in a mortar with a pinch of salt and add to the sauce.
  6. You can keep the sauce in a jar in the refrigerator and add the parmesan at the serving stage. Bon Appetit!
  7. Note: This sauce should be consumed within 2-4 hours at the latest after preparation due to the aromatic greens and egg it contains.
