Put a glass bowl on the counter and place a damp kitchen towel under it to keep it steady while you whisk. You can use a whisk, mixer, or whisk, but whisking by hand is a much better way to adjust both consistency and flavor.
Take the egg yolks, mustard and lemon juice in a bowl and whisk them and add the olive oil drop by drop while continuing to whisk. When the sauce gets a little thick, continue to add the oil thinly like twine.
As the whisking continues, the sauce will begin to take on a lighter color and consistency. While beating, lift the wire occasionally and let the mixture breathe.
