Homemade Mayonnaise

Additive-free, homemade mayonnaise adds flavor to every plate it touches. You can use this natural mayonnaise with peace of mind in cold dishes, next to your grills, appetizers, salads and sauces. Bon Appetit!

Ingredients:

For 8 people

Egg Yolk 2 Qty
Olive Oil (Riviera) 1 Half Cup
Lemon Juice 1 Tbsp
Mustard (By Desire) 1 Tsp (large)
Granulated Sugar 1 Tsp
Fine Salt 1 Tsp
White Pepper 1 Tsp
Apple Cider Vinegar 1 Tsp (large)

Instructions:

  1. Put a glass bowl on the counter and place a damp kitchen towel under it to keep it steady while you whisk. You can use a whisk, mixer, or whisk, but whisking by hand is a much better way to adjust both consistency and flavor.
  2. Take the egg yolks, mustard and lemon juice in a bowl and whisk them and add the olive oil drop by drop while continuing to whisk. When the sauce gets a little thick, continue to add the oil thinly like twine.
  3. As the whisking continues, the sauce will begin to take on a lighter color and consistency. While beating, lift the wire occasionally and let the mixture breathe.
  4. Finally, add salt, white pepper, sugar and vinegar and continue beating. You can put the thickened mayonnaise in a glass jar and store it in the refrigerator for 2-3 weeks. Bon Appetit!
