Meat Dinner

Keşkek, one of the traditional dishes of Turkish cuisine, is an indispensable invitation dinner of weddings and holidays in Anatolia. Is it because it shows the value given to the guest? It is unknown, its construction is quite tedious and time consuming. You can carry this tradition to your home for your special guests on special occasions and share this flavor with your loved ones. Enjoy your meal!

Wheat 3   Cup
Veal Cubes 300   Grams
Salt 1   Tbsp
Butter 3   Tbsp
Tomato Paste 1   Tsp (large)
Chili Pepper 1   Tsp
Dried Mint 1   Tsp

Steps:

  1. Wash the wheat and soak it in warm brine the night before.
  2. Wash the meat and put it in the pressure cooker. Add enough hot water to cover it by 4-5 inches and cook for 40-45 minutes.
  3. Strain the wheat that you soaked overnight, add enough water to cover it by four fingers and leave it to boil in a separate place.
  4. Set aside half of the cooked meat to put on the kishkek at the service. Add the wheat to the meat and continue cooking together. You can check and add salt.
  5. When the wheat grains start to burst, the meat will start to disperse. After this stage, cook by mashing with a wooden spoon (originally beaten with a mallet). If the water decreases, you can add hot water little by little.
  6. When the wheat releases its starch and becomes gum, it means that it has gained consistency. At this stage, you can prepare the sauce. For the sauce, melt the butter. Lightly fry the tomato paste in the oil and add the mint and chili peppers. Add 1/2 tea glass of hot water and turn off the fire when the sauce thickens.
  7. Turn the reserved meats again in a pan with a little butter. Take a clean ladle of keskek and put a piece of meat on the serving plate. Pour the buttered tomato sauce on top and serve while hot. Bon Appetit!
